Easy summer seasonal recipes. Perfect for park picnics or terrace dining

 

Summer signals strawberries, avocados, tomatoes and zucchini all being in season.

Eat with the seasons and buy locally. It’s not only environmentally friendly, but it ensures your body gets the freshest and tastiest produce. Fluctuating your eating habits year round so they're aligned with the seasons means you’re giving your body the ultimate variety of fruit and veggies it needs. Your body is more prone to dehydration in summer, which is why mother nature supplies succulent juicy produce in the warmer months.

Here’s a few super easy summer recipes to try with in season produce. All fresh, light, easy and super tasty. Best eaten while enjoying the sun* take them on a picnic in the park. Or invite some friends over for dinner on the terrace.

Strawberry, balsamic & rocket salad
Toast 1/2 cup of pecans in the oven. Slice 1 1/2 cups of strawberries lengthwise. Place on top of 150 grams of rocket/arugula. Dress with olive oil, balsamic vinegar, salt and pepper. So simple, but the strawberry, rocket and balsamic flavour combo is simp divine!

Raw power salad

Grate two beetroots, two carrots, and one apple. Cover with the juice of one lemon, and a sprinkle with a handful of cranberries and pumpkin seeds. The raw goodness, and protein in this one mean it gives you a real energy boost. Naturally sweet, this salad is sure to be a summer favourite.

Courgetti

Spiralise or shred two courgettes. Cook one leek, two cloves of garlic, and 100g of sliced mushrooms slowly in olive oil. Turn off the heat, and add a drizzling olive oil and the juice of  a lemon. Blanch the zucchini in boiling water. Add the dressing above, and salt and pepper to taste. Garnish with parsley. Once again, delicious, light and nutritious!
